TORTILLA SOUP:
3-4 chicken breasts
1 small can of red enchilada sauce
1 carton of chicken broth
1 can of black beans, drained
1 small can diced green chiles
1 can of corn, drained
1 can of pinto beans, drained
1 can of diced salsa style tomatoes
half an onion
cumin to taste
taco seasoning to taste
1/2 cup of rice
garnish with cheese, cilantro, lime, tortilla chips
COOK ON LOW 6-8 hours, HIGH 4-6 HOURS
Shred chicken once fully cooked, place back in slow cooker, serve.
