The (free!) software I use and recommend for scanning books: NAPS2 (Not Another PDF Scanner 2).

PROs: Why I Use NAPS2

- Free/zero cost (donations encouraged but not required)

- very easy to create CUSTOM PAGE SIZES to match the book page size

- very easy to use. It was easy to get familiar with and is very well suited to large scanning projects like scanning an entire book

- works with both TWAIN and WIA device interfaces, which means it is compatible with *most* scanners

Cons: What you should know

- only available on Windows platform (NOT Mac OSX, not Linux)

- occasional program crash when rotating/cropping scanned pages (simply re-start and you are back where you were, with nothing lost, so this is a minor, occasional annoyance)

- does not work with NON-TWAIN scanner(s) -- i.e. does not work with Fujitsu SnapScan, because the SnapScan does not provide a TWAIN interface
