Dwarf Fortress is an amazing game that sacrifices graphics (and ease-of-use) for mountains of detail and simulation. Each dwarf has a personality (likes/dislikes, aptitudes/struggles, etc.), physical traits, and complete independence. The game tracks and uses those attributes, and more, to influence every waking hour of each dwarf. You can tell them what to do, but without a steady supply of booze they're not going to obey (and may possibly go insane and kill everyone).

I'm playing using the Lazy Newb Pack, a combination of utilities and tilesets that makes the game much easier to play. It also includes the game binaries, so it's all you need to get started. Unless you're a Dwarf Fortress expert, download the newest versions here:
