Simple Iranian barberry jam
A cup of barberry
A cup of sugar
A cup of water
Citric Acid, a quarter of a teaspoon
Hello, today we want to make barberry jam. Barberry is a tasty, sour and useful fruit that we mostly use in dried form in Iran
First, pour a cup of barberry in the basket and pour water on it to wash it
Then pour a cup of water into the pot and add a cup of sugar and a quarter of a teaspoon of citric acid. Let it boil for ten minutes until it thickens. Citric acid can be added after the syrup thickens. Instead of citric acid, you can add a tablespoon of lemon juice.
After it thickens, add the barberries and let it boil for 5 to 7 minutes. Barberry cooks quickly, so check after 5 minutes if the barberries are glassy, turn off the heat and the jam is ready. Then we let it cool a little, then we put the lid on the pot and let it stay for an hour
After cooling, pour the jam into a glass jar and put it in the refrigerator. If barberry is boiled too much, its color will be dark.
