Here is the recipe for catfish cakes: (makes about 10 cakes) (portions are estimates - I eyeball it everytime because the amount of catfish is never precise)
1 pound catfish shavings
1 medium onion, chopped
2 cups of chopped green onions
1 teaspoon prepared yellow mustard
1 tablespoon mayonnaise
1/2 teaspoon Old Bay Seasoning or to taste
2 1/2 cups crushed Ritz Crackers
2 egg
1 Liter peanut oil (for frying)

Here is the recipe for the Catfish Gumbo: (portions are estimates - I eyeball it everytime because the amount of catfish is never precise)
1 pound catfish chunks
1/4 cup olive oil
1/2 cup celery, chopped
1/2 cup bell pepper, chopped
1/2 cup onion, chopped
1 clove garlic, chopped
1 normal sized can of chicken broth
1 cans diced tomatoes
2 cups of chopped okra
1 teaspoon salt
1/4 teaspoon cayenne pepper.
1/4 teaspoon dried thyme
2 bay leaves
