Tibok Tibok is the Kapampangan version of Maja Blanca, or I would say somewhat like the Panna Cotta of Pampanga.
Unlike the Maja Blanca which is made of coconut milk, cornstarch, sugar and corn, the traditional Tibok Tibok Kapampangan is made using carabao's milk, ground rice flour and sugar.

There are many variations of the original recipe, which may include pandan leaves, corn or even langka (jackfruit).
