Breakfast - vegan dates and almond smoothie, lunch - sweet potato curry and rice, dinner - cinnamon veg rice
DATES AND ALMOND SHAKE
7-8 almonds
2 dates
1 tsp each of cinnamon powder and cardamom powder
1 cup dairy-free milk preferably thin coconut milk
SWEET POTATO CURRY AND RICE
1/2 cup rice (soak and cook)
1 small sweet potato - peeled and chopped in large pieces
1/2 cup spinach or bok choy chopped
1 tbsp tamarind pulp (if not available, then use 1 tbsp lemon juice at the end) 1 cup water
1/2 cup coconut milk
Pinch salt
1 tbsp cumin seeds
1 tbsp ghee or coconut oil
Dry spice powders - 1/2 tsp dry ginger powder, 1/4 tsp turmeric powder, 1⁄4 tsp coriander seed powder
1 inch piece of ginger
CINNAMON VEG RICE
1.5 cups chopped veggies like carrots, french beans, green peas 1/2 cup rice soaked for 8 hours
1 tsp ginger garlic paste
Salt as required
2 tablespoons coriander leaves for garnish
Whole Spices - 1 small bay leaf, 1 inch cinnamon stick, 1 tsp cumin seeds, 3 cloves 1 tbsp pumpkin seeds
2 tbsp oil (coconut oil or cold pressed sunflower oil) or ghee
