Flaming Sorbet

Oz Kilim attempts to create a sorbet that dosn't melt.

Recipe.

Ingredients:
Citric Acid
Apple powder
Apple juice
Gellan
Fructose and Sucrose (regular caster sugar) and glucose
Water
Fruit alcohol

Equipment:
Fast blender
Thermometer
Freezer
Blowtorch

Step 1. Put the sugars in a pan
Step 2. Add the apple juice
Step 3. Reduce for 5 mins
Step 4. Add Citric acid
Step 5. Add apple powder
Step 6. Add two teaspoons of gellan
Step 7. Blend with hand blender
Step 8. Put in a bowl
Step 9. Put in a Tupperware container
Step 10. Freeze for 6 hours
Step 11. Crush
Step 12. Add ice and fruit alcohol
Step 13. Take out and spoon onto a heatproof surface
Step 14. Light on fire with a blowtorch
