This warming beet and vegetable soup is very tasty and very easy to make. I think this is the best borscht recipe there is, but many variations exist. Borscht - or borsch - originated in the Ukraine and is claimed as their own by Russia, Poland, Belarus, Lithuania and Ashkenazi Jews. There are endless variations on what goes into borscht, but the standard items are root vegetables and beetroot. Borsch should also have a tart flavour which comes from vinegar or fermented beet juice.
Borscht is usually served with soured cream and fresh dill, and it's a soup that can be eaten hot or cold. Borscht can be made with beef or pork, or no meat at all.
